The dishes served at our gourmet hotel in Defereggental are a symphony for the senses, courtesy of our multi-award-winning kitchen. Chef Sandro Zanato and his fabulous team conjure up exquisite delights every day. They attach great importance to natural, regional ingredients and gentle preparation methods without artificial enhancers. Sandro crafts dishes that are nothing short of masterpieces. His culinary prowess has not only won the hearts of our guests but also impressed critics from Gault&Millau and Falstaff, accolades we wear with immense pride.

Indulge from sunrise to sunset – after all, you’re on holiday! In our wellness hotel with gourmet cuisine, we are happy to look after you. Our delicious breakfast is the perfect start to an active day. In the afternoon, we serve a typical Tyrolean “Marende” snack, and, in the evening, the Jakobistub’n tempts you with the best that Alpine cuisine has to offer – each course perfectly paired with select wines from our collection. In addition, we regularly organise gourmet evenings at our gourmet hotel in Austria, such as a “Kaiserschmarrn Party” or “Fish and Wine” in the garden.

Enjoy pastries and cakes from our own patisserie. Whether you prefer sweet or savoury, the selection is irresistible! In addition, a tea and coffee bar, fresh fruit, juices, a creamy soup, hearty spreads, prosciutto, and much more await you. In summer, you can dine on the sun terrace.
From 7 p.m. to 8:30 p.m.
In the evening, we serve a five-course gourmet menu full of culinary highlights. The menu includes a selection from the salad and fresh vegetable buffet, a starter, two soups, and three main courses to choose from, as well as dessert. For the perfect wine pairing, our in-house sommelier and gracious host, Christian Jesacher Jr, is at your service to suggest the ideal complement to your dish. In addition to the gourmet menu, you can choose a wellness or vegetarian menu if you prefer.

Only the best ingredients at our gourmet hotel in Austria
Our kitchen takes immense pride in maintaining a healthy approach while accentuating the rich flavours of Austrian gastronomy. To achieve this, we avoid using artificial flavour enhancers such as glutamates and use only natural Himalayan salt in our dishes. Our ingredients are always fresh, high quality, and, where possible, regional. Char and brown trout come from our fish farm in Maria Hilf; lamb and game are sourced from East Tyrolean farmers and hunters.
